Pumpkin Cake

 Impress the family this Thanksgiving with something pumpkin but not pie..

   Cake
      2    C   flour                                                         2    C   sugar
      2   tsp  baking powder                                         4          eggs
      2   tsp   cinnamon                                              11/2 C   oil
      2   tsp   baking soda                                             2    C   pumpkin
     1/2 tsp   salt                                                           dash    nutmeg
      1   tsp   cloves
  
     Frosting
      1           stick butter                                              2          small packages,cream cheese
      1    C    powdered sugar                                       1   tsp  vanila
     1/2  C    Walnuts
     
       Sift together flour,cinnamon,soda,baking powder,salt and cloves. Beat together sugar,eggs and oil. Mix together with flour mixture and add pumpkin. Bake at 350 degrees for 45 minutes.

       Combine butter,cream cheese,powdered sugar and vanila. Frost cake and sprinkle with nuts..
     ENJOY!!!!
   
     1/2  C    walnuts

Pumpkin Roll

Easier than you think and very delicious.......

   Cake
     1    C  sugar
   2/3   C  pumkin
      1  tsp lemon juice
    3/4  C  flour
       1  tsp baking powder
       2  tsp  cinnamon
       1  tsp  ginger
       1  tsp  salt
     1/2 tsp  nutmeg
        3        eggs

    Filling
       6   oz   cream cheese
    11/2   C   confectioners sugar
        2  tbs   butter
      1/2 tsp   vanilla

    Mix together cake ingredients and beat for 5 minutes,spread on greased cookie sheet and bake for 10-15 minutes at 375 degrees. Turn out on towel dusted lightly with confectioners sugar.Roll up towel and cake and cool completely. When cool,unroll and spread with filling. Reroll and refrigerate... ENJOY!!!!!

Pecan Tart

Nice quick and easy recipe...


  Dough
     1    C  flour
     1/2 C  butter
      3  oz  cream cheese

    Filling
      2          eggs
      1/2  C   brown sugar
       3   tbs  soft butter
       1   tsp  vanila
      1/8 tsp   salt
      1/2   C   light corn syrup
      1/2   C   chopped pecans

  Mix together ingredients for dough,chill for about 30 min. form dough in a greased tart pan
  and chill for while you mix up the filling. Mix filling and pour into crust. Bake at 325 degrees
  for 25 minutes..   ENJOY!!!

Brown bag apple Pie

Tried this at a summer get together. BIG hit!!!
    Ingredients
      CRUST:
          2     c all purpose flour
         1/4   c sugar
         1/8 tsp salt
           1     c butter cut into pieces
         1/3    c ice water
        FILLING:
           5       Granny Smith apples
          1/2   c sugar
        11/2 tbs cornstarch
           1   tsp lemon juice
           1   tsp vanila extract
          1/4 tsp ground cinnamon
          1/8 tsp salt
          1/8 tsp ground nutmeg
        11/2 tbs cold butter

  Make the crust in a food processor. Combine flour,sugar,salt.Add the butter and pulse until pea sized pieces appear.  Add the water and pulse briefly.Transfer the crumbs to 2 pieces of parcment paper and form into 2 disks. Wrap the disks in plastic and refrigerate overnight.
  On a lightly dusted surface,roll out 1 disk to a circle 1/8 in thick. Keep rolling until circle is about 2 inches larger than the 9 in pan,line the pan with the dough.
  Filling. toss apples,sugar,cornstarch,lemon juice,vanila,cinnamon,salt and nutmeg together put into pie shell and dot with butter,roll out the other crust put it on and pinch dough together. Dont foget to cut a few vents in top dough.
  Slide the pie into the brown paper bag and seal tight,place on a cookie sheet.
  Heat oven to 375
   Bake for 1 Hour take out and remove {carefully} from bag place back on cookie sheet and bake another 15 minutes or until crust is golden brown...............
