Brown bag pumkin pie

       I got a wild hair a couple of days ago. I like the brown bag apple pie so i thought. I wonder what it would taste like with pumpkin. I came up with what I thought would work and went to it. The family loved it. I have to tell you,its not for everyone but if you want something really delicious and different that your family has never seen before then give it a try

       Crust
           2   c     flour                      1/2   c   sugar
          1/2 c.    brown sugar          1/4  tsp salt
          1/4 tsp  baking powder    11/2  tsp vanilla
            2  tbs  milk                        1    c   butter
            2           eggs

        Filling
            2  c   pumpkin                   1 3/4   c   milk
            2       eggs                             1/2  tsp salt
            1  c   brown sugar              1 1/2  tsp cinnamon
            1 tsp allspice

         Combine dry ingredients for crust in  food processor. Add milk,vanilla and eggs.Pulse. Add butter. Pulse. It should look crumbly. Remove from processor. Separate into 2 pieces. Place each
piece between 2 pieces of wax paper. Flatten into disk. Refrigerate overnight.                                                                                                                                                                                                                                                        
          Next day roll 1 disk out for bottom crust. put in 9 inch buttered pan.  
      
        For filling,combine ingredients. Beat together with blender. Pour into pie crust. Roll out second disk to fit over pie,slice a couple of vents on top. Place in brown paper bag and bake at 425 degrees for 50 minutes. Take out of bag(carefully). Bake for 15 more minutes or until nicely browned.

Black Forest Pie

  This is an absolute heavenly treat for the family,a bit time consuming but well worth it.

     Filling

     1   c   sugar                                       1/3  c   unsweetened chocolate
    1/3 c   milk                                         1/4  c   butter
      2 tbs  flour                                          2        eggs
      1  cn   cherry pie filling

       Topping

       1 container whipped cream

           Combine sugar,chocolate,and flour in a saucepan,stir in butter and milk. Cook over medium heat until it begins to boil. Remove from heat,let cool blend in eggs and half of cherry filling. Pour into prepared 9 inch crust. Bake at 350 degrees for about 40 minutes. Remove,refridgerate for at least an hour.
            Spread half of whipped cream on top of pie. Add remaining cherry filling and top that with remaining whipped cream. Refridgerate until serving. ENJOY!!!!

Honey Chiffon Pumpkin Pie

  A truly fantastic twist to the old guard pumpkin pie but just a bit harder to make.

      Crust

         1 3/4   c    crushed graham crackers             1/4   c    softened butter
         3        tbs   honey


       Filling

         1        tbs  plain gelatin                                  1/4   c   cold water
         3               eggs(separated                                2    c   pumpkin
        3/4       c    honey                                            1/2   c   milk
         1        tsp  salt                                             1 1/4  tsp  cinnamon
         1        tsp  allspice                         

        Crush crackers.Blend honey with butter,mix with crackers. Bake for 10 minutes at 375 degrees. Set aside.
        Combine gelatin and water. Beat egg yolks. Combine with honey,pumpkin,milk,salt,spices. Cook in double boiler until thick,stirring constantly. Remove from heat and add gelatin. Stir until dissolved.
         Beat egg whites until whites stand in stiff peaks. Fold whites into pumpkin mixture thoroughly.
     Place mixture into crust. refrigerate for at least 3 Hours. Enjoy!!!!!

Pumpkin Pie

  Just in time for Thanksgiving.

    1 3/4    c    pumpkin                                 3/4  c     sugar
    1          c    evaporated milk                       2          eggs
    1/2       tsp salt                                          1/2  c     brown sugar
    1/4       c    sugar                                       1 1/4     cinnamon
    1          tsp allspice

   Mix ingredients together. fill 9 inch crust. Bake at 425 degrees for 45-55 minutes.Enjoy!!!

Homemade pumpkin pie filling

   If you really want to impress your guest on Thanksgiving or any time try this instead of canned filling.

     Take two pie pumpkins( about five + or- pounds). Cut them in half. Place cut side up on a cookie sheet. Bake for about 30 minutes(until they start to brown a bit). Let cool.Scoop out the flesh and puree. Should be enough for a couple of pies. Wasnt to hard was it?  Enjoy!!!

Incredible Pie

  

       Not just an Incredible taste but super easy to make.

          1       large container of  Cool Whip              1/2  c   chopped pecans
          1       can condensed milk                              1/2  c   lemon juice
          1       can crushed pineapple(drained)             1         can coconut
          2       nine inch graham cracker pie crust

         Mix ingredients. Pour into crust. Chill. Serve. Thats it. I told you it was easy.  ENJOY!!!

Easy Pecan Pie

        Here is an easy to make delight for pecan lovers.

           1/2   c   sugar                                 1/4   c   butter
             1    c   dark corn syrup                 1/4  tsp salt
             1    c   pecans(broken)                    3         eggs
             1         nine inch pie crust(check old post)

          Mix sugar and butter. Add syrup and salt,beat well. Beat in eggs. Add pecans. Pour into pie shell.

          Bake in preheated 350 degree oven for one hour or until knife comes out clean.

                     ENJOY!!!!

German Chocolate Pie

This pie will be a big hit at home or any get together and its easy to make.

     1        unbaked pie shell( see past post)      1/2  c   flour
     6  oz   sweet chocolate                                  1  tsp vanilla
   1/4   c   butter                                                  2        eggs
     1         14 oz can condensed milk                  4   oz  flaked coconut
     1    c    chopped pecans

       In saucepan,over low heat,melt chocolate and butter and remove from heat. Add condensed milk,flour,vanilla,salt and eggs and mix well. Reserve 1/4 c coconut,stir in remaining coconut and pecans. Pour into pie shell,garnish with remaining coconut.
       Bake in preheated 350 degree oven 40-50 minutes till top is firm and coconut slightly browned.

Easy Pie Crust from scratch

   I wanted to share an easy,inexpensive crust recipe for future pie recipes. Dont forget to brag that you made it,not some company somewhere.

      One 9 inch crust(double ingredients for two)
                1    c    all purp flour(sifted)
               1/2 tsp  salt(I like a dash more)
               1/3  c    shortening
                 3  tbsp water
     
         Mix together dry ingredients. Cut in shortening with a pastry blender. Sprinkle with water. Gather dough together and press firmly into ball. Roll into a circle 1 inch larger than pan. Your already....

Carrot Cake

 Get a big pat on the back for this made from scratch Carrot Cake.

       Cake
          2   C   sugar                         1   tsp   salt
          2   C   all purp flour         11/2   C   oil
          2  tsp  baking soda               2    C   grated carrots
          2  tsp  cinnamon                  4           eggs

        Icing

          1   8 oz cream cheese           1  tsp   vanilla
          1 stick  butter                       1   C     chopped nuts
          1   C     confectioners sugar

           Combine dry ingredients. Add eggs and oil and mix well. Add carrots and beat on medium speed with mixer about 2 minutes. Grease and flour three 9 inch cake pans. Preheat oven to 350 degrees. Pour evenly in pans and bake 25 to 30 minutes.
            Whip cheese and butter together until fluffy. Add sugar gradually. Add vanilla and nuts. Ice cooled down cake between layers and top.  ENJOY!!!

Honey Walnut Cookies

An Incredible and easy Fall treat
   
   1/3   C   sugar                                        1/2   C   softened butter
     1   tsp  vanilla                                    11/4   C   all purp flour
   3/4   C   chopped walnuts                      1/4   C   light cream
   1/2   C    honey

    Mix sugar and butter together add vanilla and flour,blend together well .Mix in walnuts.Add cream and mix together(best with hands at this point). Shape into ball. Cover with waxed paper and refridgerate for 30 minutes. Preheat oven to 350 degrees. Drop about 1 tbsp of dough onto lightly buttered cookie sheet,flatten slightly with fork,brush tops with honey and bake 18-20 minutes. Makes 24-36 cookies.
